Blueberry & Almond Lattice Pie

Pies are one of my favourite things to eat and bake because they’re crispy and chewy with a delicious filling. This pie in particular is blueberry, but it also has a super yum layer of almond meal and sugar hidden inside. The greatest thing about pies is that they require very little effort but always look stunning. If you’re not up for making a lattice top, just use a single piece of pastry and cut out some cute shapes with a cookie cutter! Woodland Wedding Inspiration

I got the idea some time ago for this shoot. I bought a woodland creatures cookie cutter set from Ikea, it had a bear, elk, fox, squirrel and hedgehog. At first I thought it would be fun to do a little woodland theme for the cookies but then I kept thinking about adding more things and then before I knew it it turned into this! The theme of this wedding cake table is woodland. It includes lots of lovely green foliage such as ivy and beautiful dark red fruits and berries like grapes and blueberries. The naked cake is a really simple yet beautiful option for a wedding cake. Adding fruit, flowers and/or foliage makes the cake look stunning and it’s definitely possible (and cheap) to make this cake yourself. All of the food featured is actually really simple to make, it just requires nice presentation. Sometimes eating breakfast can be such as hassle, especially when you were meant to leave for work 10 minutes ago. No time to sit there eating cereal and watch the clock tick by. Ladies and gentlemen, I have the solution for you. I feel like I’m pitching some miracle tonic here, but seriously, these egg bites are the answer to your breakfast problems. They’re freezable, they’re full of protein, they only need a quick zap in the microwave, you can eat them on the go and last but not least, two of these babies will fill you up until lunch time, no doubt. This recipe uses chicken, tomato, cheese, onion and parsley as the main flavours, but you can change these ingredients to what ever you like! Feeling a bit Greek? Low calorie fudgey brownies

Low calorie? Brownies? When have you ever heard those words in one sentence before? You guys better believe it because I can never lie when it comes to brownies. Now there is a brownie option for those trying to go healthy or lose weight, and they are wheat free too! These seriously fudgey brownies are so rich and chocolatey that you’ll be satisfied with one square, as impossible as that sounds, and they’re only 62 calories a square. If you aren’t on any particular diet you’ll still want to bake a batch of these babies because they are scrumptious and literally take 2 minutes to put together. If you’re feeling daring, and I know you are, serve these brownies with a nice big spoonful of my homemade vegan nutella, yummm! The main ingredients here are oats, greek yoghurt, cocoa powder and stevia sugar replacement, a natural alternative to sugar that has fewer calories. Banana muffins

If you’ve got a craving for some super fluffy and moist muffins then these are for you! They taste soo good straight out of the oven, especially with my vegan nutella spread on them. These banana muffins are freezer friendly so you can keep them in the there and just take one out the night before for a yummy breakfast on the go. The muffins have a pinch of cinnamon, a splash of vanilla and some ripe bananas. You could add some choc chips into the mix or some strawberries if plain banana isn’t your thing. Grease a muffin tray and preheat your oven to 180C/350F. Place the ripe bananas in a mixing bowl. Mash well. I love the smell of ripe bananas! It’s hard not to spoon this on some toast with peanut butter. Add the egg, sugar, butter and vanilla. If your using hot melted butter, mix all the other ingredients and slowly pour the butter in as you mix. This prevents cooked bits of egg. Mix well. Sift in the flour, baking powder, …

Never-fail brownies

  I remember when I couldn’t really bake brownies very well. They always came out really flat and not at all chewy. I don’t know what happened, I always followed the recipe but they never came out like they were supposed to. Then one day, out of the blue, I could make them! I finally conquered delicious, chewy and chocolatey brownies. These brownies are fool-proof! You won’t ever have to worry about them failing, they’re so quick and tasty! I can whip up a batch in just a few minutes and they taste so goddam good, really nice and chocolatey. My other brownies are super delish too, but I don’t have cream cheese in the fridge all the time. I have the ingredients for these brownies at all times, so if I’m craving brownies all of a sudden, these certainly satisfy that itch. You and I are friends, right? Neapolitan Cakes

I was on pinterest I think, and I saw some little neapolitan cupcakes. I loved the colours and it reminded me of my childhood. We always had neapolitan ice cream because my mum loved vanilla and my dad loved strawberry. I immediately thought I should make something neapolitan, but not cupcakes, I wanted something a little bit different. After finishing my never-fail brownies (the recipe is coming soon!) I didn’t really know what to do with them. At the same time, I also had a craving for some nice vanilla cake, so I had baked a nice big one and then I had an idea. Why not make theses into neapolitan cakes? I searched the house for some small circle cutters and found none, so I used shot glasses. Folks, I do not recommend this! GF Crownies (cookie brownies or is it brownie cookies?)

I’m pretty sure I’ve mentioned that I’m terrible at making cookies. I managed to pull off these but I needed something gluten-free so I searched for a delicious –delicious being the key word here- chocolate cookie that wouldn’t taste dry or crumbly and instead be moist and very, very tasty. These, my friends, are those cookies. They were chewy in the middle and crunchy around the edges with lots of chocolate. They were a big hit and I’ll admit, I sneaked some for my own personal supply. GF crownies (adapted from Yammie’s Gluten Freedom) – 2 cups chocolate chips – 2 1/2 cups icing/powdered sugar – 1/2 cup unsweetened cocoa – 1 tbs cornstarch – 3 egg whites, room temp – 1/4 tsp salt Method Preheat oven to 175C/350F and line a cookie tray or baking rack with grease-proof paper. In a large heat-proof bowl melt 1 cup of chocolate. Do 20 seconds at a time to make sure you don’t over do it. Keep stirring between heating and take out as soon as it’s melted. In …

Thomas the tank engine cake

My workmate wanted me to make her lovely little boy a colourful cake for his 5th birthday. Something to do with trains was the only criteria and since he adored Thomas I knew what to do. This was the first time I worked with fondant, using it only for decorations such as the tunnel entrance, train tracks and train signs. I had thought about covering it in fondant but honestly, I’m sure a 5 year old little boy would like the taste of frosting much more than fondant. I have to admit I was pretty pleased with my effort. I spent a little time just thinking about what it should look like and asked his mum if he had some spare trains I could borrow for it. cream cheese brownies (the best ever) + oreos

I have made these brownies at least 7 times in one month, my friend has asked me to make them for him at least 4 times. If that isn’t a testament to how good they are then I don’t know what is. They are the most delicious brownies I think I have eaten… EVER. They’re moist, chewy, crispy, oh so chocolatey and everybody loves a little Oreo goodness, am I right? The recipe is  super simple to make and has not failed me yet. It combines a delicious vanilla and chocolate brownie base with ribbons of velvety smooth cream cheese.
