Cinnamon & butter mini muffins

These were a really nice quick treat. Soft and fluffy muffins with a light crunch thanks to the cinnamon and sugar topping. It’s nice to have something like this available in the fridge when you need something small and quick to eat. I did plan on doing that and having lots in the fridge….but I kind of kept eating them as I was cleaning the kitchen. Don’t look at me like that! I couldn’t help it, they were just so yummy. I’d like to see you try and stop yourself from eating them all. The recipe is super quick and easy! Only takes a few minutes to whip them up and then 20 to bake. How great are recipes like that? I always have recipes like this and this one handy when I need to make something delicious and quickly. Banana (or carrot) cake

This was the first cake I mastered in high school. It’s the perfect beginners cake because it is so super easy and even if you make a mistake it’s ok, it’s very forgiving. One time I forgot the bananas and it turned into a yummy spice cake. Now that is foolproof when you can forgot the major ingredient and not destroy it! My mum was given this recipe from a friend, well actually it was for carrot cake, but if you omit the carrots and walnuts and add bananas, it makes a moist and delicious cake. How great is it to have a recipe that can make a banana or carrot cake? It’s so simple to make that it honestly only takes a few minutes. I got a friend to time me and it took 8 minutes! Not too shabby. I urge you to keep this recipe handy, you never know when you’ll need to whip up a cake in a few minutes. I know it has been a lifesaver in tight situations. Also, this …

Apple Galette

Whenever I bake something now I try really hard to make something new. I’ve always wanted to bake a galette, I love the rustic look of a free-form tart and of all the galettes I find the apple one the most beautiful, all the layers of sliced apple pieces looks like a piece of art. I made a pastry base for this but next time I will use puff pastry, which I prefer to making one. That’s just my preference so you know, do whatever makes you happy. I had originally planned to give this a caramel base and make it a tart, but I changed my mind and went with a plain apple galette.Β  This galette was incredibly easy to make, except for the time it takes to peel and slice those damn apples. My god that was insanely boring, but to avoid that you could convince some poor fool to do it for you or use berries instead OR you could even use pre-sliced tin fruits like peaches or apricots. Lemon Meringue Pie

Oh god I love pies. If you haven’t noticed, that is pretty much all I bake. I can stop whenever I want though, I don’t have a problem. Don’t look at me like that… The other thing I am kind of obsessed with is lemon. What better idea than to merge the two together and bake a glorious lemon meringue pie?! I love the tangy and creamy curd, the soft and fluffy meringue and the crunchy and flaky pastry. Oh man, just… yumm. This was actually the first time I made my own pie crust. I’m not to fond of them because of the floury taste, so I usually just use some puff pastry but this time I was pleasantly surprised. Every time I make a lemon curd I’m always reminded how the yellow colour doesn’t come from the lemons, but the egg yolks. I always find that surprising when I make it. I also made more curd than needed for the pie so I made these delicious little puff pastry parcels filled with some …
